Bermar Australia History by Bermar Australia
wine preservation systems since 2006
Why wine preservation systems?
The On Trade dilemma...
Serve tired wines, high wine waste or poor selection
Wine and champagne a delicate things, after...- 2 hours open unpreserved, champagnes are flat, dull and lose their essense.- 8 hours open unpreserved, still wines oxidise and lose flavours and aromas.
Skillfully crafted wines destroyed by poor open bottle preservation
- diners deserve better!
- chefs deserve better!
- winemakers & viticulturists deserve better!
Wine wastage
- Venues tipping profits down the drain, not an option
Reduced by-the-glass selection
- boring your customers
- limiting venue profit opportunities
Testing Time... off to the Barossa
On return to Melbourne, I organised a system to be sent to the Baroosa for the winemakers and lab tech's test it out for a few months.
The results... As promised, it preserved open bottles of still wines, and champagnes for at least 3 weeks after opening. Being stopper based there was no limit to the number of bottles preserved.
The perfect solution to protect open wine bottles, allowing venbues to offer a great selection by- the- glass without wine wastage.

The Discovery... Thanks Johnny!
in 2004 old friend Johnny Gambaro scion of the famous Brisbane restaurant family, called me behind the bar and showed me his new wine preservation system. It was my first view a Le Verre de Vin preservation system, Johnny gave me a run through how one small system could preserve unlimited numbers of both still wine and champagne bottles.
I was impressed, exactly what the industry badly needed! The only options previously were unreliable the gas tap systems preserving a few bottles at a time, almost useless champagne stoppers, and recently a domestic needle product too slow and too expensive to run for restaurants and bars.
Next Steps...
I convinced the company to puchase 500 Le Verre de Vin systems to use in the on trade grow their share of wine by-the-glass sales.
After leaving the corporate wine industry 2006, Bermar Australia was born and started distributing Le Verre de Vin wine preservation systems.
